Perfect oven baked potato wedges

I've been meaning to tell you (the image is four years old) my way of getting perfectly cooked potato wedges with minimal effort. 

You cut them (to roughly the same size). 

You cover them in oil, salt and pepper. 

You then arrange them so that the only thing touching the baking sheet is the potato skin.

You then put them in the oven (at 225 °C) and wait until they are perfect.

You do not stir them. They will not stick to the sheet. And they will all be cooked to the same level of perfection.

Chef

T's first original recipe. Pancakes with muesli (and jam). I predict a great career as a chef at a Michelin star restaurant in the near future.


(Darn this was hard. I have forgotten how to spell and how to express myself in English. Perhaps it is due to my long absence from this here place, or maybe it is the sleep that eludes me that makes it so difficult. Ill try to come back soon at a more reasonable hour and see if it will be a little easier.)

What a day!!

Today was the first day that I left Tage alone at the daycare. It was only for half an hour, and it went all right. I mean, it wasn't fun to walk out the door and leave my kid crying in the arms of someone else, but he calmed down after a while they told me. But that was not what brought on the title of this post, it was something that happened during this 'free' time that I got.
 
I walked around without a real goal, just staying away and trying to not obsess too much over the fact that my kid was crying. I happened to walk by a grocery store and thought 'maybe I should just pop in and get me a chocolate bar, I deserve that don't I?' even though I am trying to loose those damned extra Christmas pounds that currently flapp around my waist. So I walked in to the store, but when I saw the fruit I actually changed my mind, I was going to have some bananas instead. But they did not have any ecological ones, and since bananas are one of the things that we only by if they are eco, I changed my mind back towards chocolate again ( I do admit that the logic here is not very sound, especially since sweets are not one of those things). Anyway: On my way back from this little detour in the healthy section towards my original goal It happened.

I walked by a cart with some wares that were marked down due to that they were going out of sale. 'Hmm, a bottle of fish sauce. That I do not need.' I thought distractedly at the same time that I, for the hundredth time the last fifteen minutes, checked that I had reception on my phone and that there were no missed calls from the daycare personnel. Just as I was about to walk on something in the back of my mind told me to look down once again, there was something in that cart, something very important.

And my mind has never been more right.

It was a product that I learned to love a couple of years ago. A product that inexplicably vanished from the stores maybe last autumn. A product that I wrote an unanswered mail to the manufacturer requiring about. A product that I have searched for all over the country. A product that I put a Wanted ad for, right here on this very blog. A product that I had lost all hopes of ever owning again. 
There they were, what might possibly be that last two jars of Chipotle paste in the country, in a sales cart, going for 10 SEK each. If they only knew what I gladly would have paid for them they would cry themselves to sleep for a week. You better believe that I bought candy to celebrate!

Omelet

If there is one thing I never expected to see in the shelves of any grocery store it is Omelet mix. For crying out loud, it is eggs, water and salt that you stir all about. It is fucking impossible to fail. But it is there. Someone came up with this crazy idea on how to make money, someone approved it, someone made the product, someone at the store took it into their assortment and no one along the line stopped and thought 'Hmm, now wait a minute, Omelet is eggs, water and salt whisked together, this is one stupid product'. It is times like these that I loose all hope for mankind.

I used to be a snob

For all my life up until just now I used to be a snob. Bags was out of the question. They were used on camping trips at most. In the morning earl gray was the standard brew, and Tower it had to be. At night I was more flexible and I would choose from my 'free weight' bought assortment. Crazy scented bags from lipton was (and still is) totally out of the question.

Then I got a job that starts at 7 and my snobbish ways went out the window. I get up as late as possible, boil some water and trow in a bag. If I slept three minutes to long it also happens that I pour some cold water in so that I can gulp it down, a procedure one of my old professors used and that I was totally taken aback of. (ok, am not really sure of the way I used the last expression) It was simply something that I would never Ever do.

I used to be a snob. And I liked it.

Disaster

A small disaster took place yesterday. My vanilla sugar crashed to the floor and was destroyed. How will I now flavour the whipped cream to the last batch of semlor for the year? At least I got to try out my new tripod as I crawled around on the floor documenting the event.

Mmmm pancakes

To gulf down a massive load of American pancakes with crispy fried bacon and maple syrup after a hard training can mean only one thing. Coma. A rather nice way to spend a night when you are all alone.

Close

I was close. Really really close. We had finished cooking a tomato sauce and then a pasta gratin with that sauce. We had eaten. I had put the rest of the gratin in tupperware for tomorrows lunch. I had put almost all of the left over sauce in tupperware to be frozen. I had done all this IN A WHITE SHIRT without getting a single spot on me. I made K aware of this astonishing fact, 'I was going to be the first amateur cook to accomplish this feat' . Then I scraped the two remaining tablespoons of sauce out of the pan and managed to make a big splash that covered me in red dots.

Smile

Made a little excursion to the great city yesterday. The first stop was at Scandinavian Photo where a new lens was purchased and two cups of quite good coffee was gulped down. Left the store more speeded than Bevis or Butthead ever was. Then we walked a couple of blocks over to Govindas restaurant. If there is one kind of food that we really miss here in this sorry excuse of a town it is the Indian cusine so we always try to get it whenever we can.
Later we tried to catch a movie, we had our eyes on 'burn after reading', but everyone else tried the same thing and was apparently better at it than us. There was some tickets left for the singalong viewing of 'Mamma mia', but we descided to take the next train back home instead...

Rest

Aaahh. A weekend of rest and relaxation. Or is it? A visit from K's parents probably means that the rest will be cut short, we will not be able to sleep until noon as usual. And I do not know if it will be possible to relax as much as we are used to. The days are filled with activities, a visit to Parken Zoo is the first thing we do tomorrow morning. I wonder if the burger joint there will surpass the wook and thai place that I really recommended in a previous post.

Walk in the woods

During a break in the downpour we took a little walk in the woods. When we came home we had enough porcini (karljohan) to make a fantastic omelet.

Maybe

Ok, maybe there is a point of following at least a basic recipe when baking. I kind of went crazy and used a bit more fluid than I usually do, and ended up, after using seven different bags of flour (four of which I used up) with a dough that weighed 5.3 kg. Luckily the result was quite good, it would have been a downer to do all that work and end up with six un-tasty loaves of bread.

Never again

Never again I will do jam from my painstakingly picked blueberries. Never. I sweat, fight mosquitoes, sweat, get all blue, feed mosquitoes and then I make jam that I will keep in a jar and be a perfect base for mould. I don't know why, but I have never managed to consume the jam that has been so fucking hard to produce. In the future the blueberries I pick will be turned into pies which then will be eaten within a day. (Together with home made vanilla sauce of course.)
On top of that, I also got a stain on my shorts when I poured the jam into the sink. Take my word for it. Blueberry jam is just no good.

Soup #30

The opinions differ. I liked it. K not so much. Butter simmered onion and endive, a dash of wine, some broth and a lot of milk. A couple of table spoons of maizena flour and then a long simmer. Top it of with some grated parmesan. It was supposed to be served over some toasts, but the track record of bread in the soups are not so good so we had the toast on the side instead.

Hmm

Drinking wine & blogging while cooking -> the likelihood that the food will burn increases.

What, alcohol, on a weekday!?

Making a soup that requires 1/2 dl of wine entitles you to enjoy the rest of the wine while cooking. Like Lloyd used to do. Nice, even if it is the cheapest tetra in the shop.

Soup #29

Gazpacho. Hmm. No, this was not a very good recipe for the cold vegetable soup. It was to much union and to much vinegar. And I think that some broth would have been good. The very bad thing is that I have to eat it again at lunch tomorrow.
